Strawberry Crunch Cheesecake Bites

Mini no-bake cheesecake bites with buttery graham crust and strawberry crunch topping. Perfect bite-sized party dessert.

Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 4 tbsp melted butter
Filling
  • 8 oz cream cheese
  • 1/3 cup powdered sugar
  • 1 tsp vanilla
  • 1/2 cup heavy whipping cream
Topping
  • 1 cup freeze-dried strawberries
  • 1/2 cup graham crumbs
  • 3 tbsp melted butter

Equipment

  • Mini muffin tin
  • Paper liners
  • mixing bowls
  • electric mixer
  • spatula
  • measuring cups
  • Food processor or zip bag

Method
 

  1. Preheat oven to 325°F. Line mini muffin tin.
  2. Mix crust ingredients. Press into liners.
  3. Bake 5 minutes. Cool completely.
  4. Beat cream cheese and sugar until smooth. Add vanilla.
  5. Whip cream to stiff peaks. Fold into cream cheese mixture.
  6. Spoon or pipe filling over crusts.
  7. Mix crushed strawberries, crumbs, and butter.
  8. Sprinkle topping over cheesecakes.
  9. Chill at least 2 hours before serving.

Notes

Chill fully for best texture.
Freeze-dried strawberries are key.
Great for birthdays, baby showers, and summer parties.
