  • 5 cups Rice Chex cereal
  • 1 3-ounce box strawberry gelatin powder
  • 1 cup powdered sugar
  • cups white chocolate chips
  • ¼ cup unsalted butter
  • 1 teaspoon vanilla extract

Method
 

  1. Place the Rice Chex cereal in a large mixing bowl.
  2. Melt the white chocolate chips and butter together in 30-second microwave intervals, stirring until smooth.
  3. Stir in the vanilla extract.
  4. Pour the melted mixture over the cereal and gently fold until evenly coated.
  5. In a separate bowl, whisk together the strawberry gelatin powder and powdered sugar.
  6. Transfer the coated cereal to a large zip-top bag, add the strawberry sugar mixture, seal, and shake until fully coated.
  7. Spread onto a parchment-lined baking sheet.
  8. Let cool for about 15 minutes before serving or storing.
