Stuffed Pepper Soup

A hearty, comforting soup with all the flavors of classic stuffed peppers—ground beef, bell peppers, tomato broth, and rice in one cozy bowl.

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion diced
  • 2 –3 cloves garlic minced
  • 4 bell peppers diced
  • 1 14 oz can diced tomatoes
  • 1 15 oz can tomato sauce
  • 4 cups beef broth
  • 1 cup uncooked white rice
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional red pepper flakes

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Knife and cutting board
  • measuring cups

Method
 

  1. Brown ground beef and drain fat.
  2. Add onion and garlic; cook until softened.
  3. Stir in peppers and seasonings.
  4. Add tomatoes, sauce, and broth; simmer.
  5. Add rice and cook until tender.
  6. Adjust seasoning and serve hot.

Notes

Cook rice separately for better leftovers
Add Worcestershire sauce for extra depth
Soup thickens as it rests
Freezes best without rice
