Sunday’s Best Slow Cooker Pot Roast

Ingredients
  

  • 3 –4 lb chuck roast
  • 1 packet onion soup mix or homemade blend
  • 1 packet brown gravy mix or homemade blend
  • 1 packet ranch seasoning mix or homemade blend
  • ½ cup beef broth optional
  • 1 lb red potatoes halved or quartered
  • 1 lb baby carrots
  • Salt & pepper to taste

Equipment

  • Slow cooker
  • mixing bowl
  • Tongs
  • knife
  • Cutting board

Method
 

  1. Pat roast dry, season with salt and pepper.
  2. Mix soup, gravy, and ranch seasoning. Rub all over roast.
  3. Place roast in slow cooker. Add broth around roast.
  4. Arrange potatoes and carrots around roast.
  5. Cover and cook: 6–8 hours on low or 3–4 hours on high, until fork-tender.
  6. Remove roast and vegetables. Shred or slice roast, serve with pan juices.

Notes

Sear roast before slow cooking for added flavor.
Add cornstarch slurry at the end for thicker gravy.
Leftovers make amazing sandwiches or can be served over mashed potatoes.
