Sweet-Heat BBQ Chicken Grilled Cheese

Crispy BBQ chicken grilled cheese sandwiches made with shredded rotisserie chicken, sweet-tangy barbecue sauce, and melted cheddar. Quick, comforting, and ready in about 15 minutes.

Ingredients
  

  • 2 cups cooked chicken shredded
  • ½ cup barbecue sauce
  • 8 slices white or sourdough bread
  • 6 –8 slices sharp cheddar cheese or 1½ cups shredded
  • 3 tablespoons butter softened
  • Optional: pinch of garlic powder or smoked paprika

  • Skillet or griddle, spatula

Method
 

  1. Toss shredded chicken with barbecue sauce (and optional seasoning).
  2. Butter one side of each bread slice.
  3. Heat skillet over medium heat. Build sandwiches: bread (butter down), cheese, BBQ chicken, more cheese, bread (butter up).
  4. Cook 3–4 minutes per side until golden and cheese is melted, pressing gently.
  5. Slice and serve immediately.

Notes

Medium heat prevents burning while allowing the cheese to melt. Layer cheese on both sides of the chicken for best results. Rotisserie chicken makes this especially easy. Best served fresh for maximum crispness and cheese pull. Add extra cheese if desired.
