Sweet Potato Pound Pudding A warm, spiced dessert that’s like a cozy hug in a bowl!

Ingredients
  

  • 2 cups mashed sweet potatoes
  • 1/2 cup unsalted butter softened
  • 1/2 cup sugar
  • 1/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • Pinch of salt

Equipment

  • mixing bowls
  • Electric mixer or whisk
  • 9x9-inch baking dish or small casserole dish
  • spatula

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. Beat butter and sugars until light and fluffy.
  3. Add eggs one at a time; stir in vanilla.
  4. Whisk dry ingredients in separate bowl.
  5. Mix sweet potatoes into wet mixture. Alternate adding dry ingredients and milk until just combined.
  6. Pour into dish and bake 35-45 min until set.
  7. Cool slightly and serve warm.

Notes

Top with caramel or whipped cream for extra indulgence.
Add pecans for texture and flavor.
