- Preheat oven to 275°F (135°C).
- In a saucepan, melt honey and coconut oil. Stir in vanilla and cinnamon.
- In a bowl, combine all nuts and cranberries.
- Pour honey mixture over and mix well.
- Spread on baking sheet and bake for 25–30 minutes, stirring every 10 minutes.
- Let cool before storing in an airtight container.
