- Heat oil in large pot. Sauté onion, carrots, celery 5–7 mins.
- Add garlic, cook 1 min.
- Pour in broth, tomatoes, oregano, basil. Simmer 15–20 mins.
- Stir in mixed veggies, cook 5–10 mins until tender.
- Season with salt & pepper.
- Serve hot, garnished with parsley and bread on the side.
