A hearty, nourishing vegetable soup that’s easy, comforting, and perfect for any night of the week.

Ingredients
  

  • 2 Tbsp olive oil
  • 1 large onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 6 cups vegetable or chicken broth
  • 2 cups mixed vegetables
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • Salt & pepper to taste
  • Fresh parsley optional garnish

Equipment

  • Large soup pot
  • Wooden spoon
  • Ladle

Method
 

  1. Heat oil in large pot. Sauté onion, carrots, celery 5–7 mins.
  2. Add garlic, cook 1 min.
  3. Pour in broth, tomatoes, oregano, basil. Simmer 15–20 mins.
  4. Stir in mixed veggies, cook 5–10 mins until tender.
  5. Season with salt & pepper.
  6. Serve hot, garnished with parsley and bread on the side.

Notes

Great with pasta, rice, or beans for a heartier meal.
Freezer-friendly for up to 3 months.
Add greens like kale or spinach before serving for extra nutrition.
