Ingredients
  

  • 1 pound ground beef
  • 1 ounce taco seasoning
  • 15 ounces chili beans undrained
  • 4 cups corn chips such as Fritos
  • 2 cups shredded cheddar cheese
  • Toppings:
  • Shredded lettuce
  • Diced tomatoes
  • Sliced black olives
  • Sliced jalapeños
  • Sour cream
  • Sliced green onions

  • Large skillet, 9x13-inch baking dish

Method
 

  1. Preheat oven to 350°F. Grease a 9x13-inch baking dish.
  2. Brown ground beef in a skillet over medium-high heat; drain excess grease. Stir in taco seasoning and undrained chili beans. Simmer 5 minutes.
  3. Spread half the corn chips in the baking dish. Top with the beef mixture and 1 cup cheddar.
  4. Add remaining chips and remaining 1 cup cheddar.
  5. Bake 15–20 minutes until cheese is melted and bubbling.
  6. Cool 1 minute, then load with desired toppings. Serve straight from the pan.

Notes

Do not drain the chili beans. Use sturdy corn chips. Add fresh toppings after baking so they stay cool and crisp. Excellent for weeknights, game days, and casual gatherings. Customize heat and toppings to taste. Leftovers reheat best in the oven or air fryer. Highly shareable—but you may not want to share.
