A classic buttery vanilla layer cake filled and frosted with naturally flavored strawberry buttercream made from freeze-dried strawberries. Perfect for birthdays, holidays, and special celebrations.

Ingredients
  

  • For the Cake
  • cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 cup whole milk
  • For the Strawberry Buttercream
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • ½ cup freeze-dried strawberries finely ground
  • 3 –4 tablespoons heavy cream
  • Pinch of salt
  • Optional Garnish
  • Fresh strawberries
  • Freeze-dried strawberry crumbs

Equipment

  • Two 9-inch round cake pans
  • Stand mixer or hand mixer
  • mixing bowls
  • whisk
  • Rubber spatula
  • Wire cooling racks

  • - Food processor or blender

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  2. Whisk together the flour, baking powder, and salt.
  3. Cream the butter and sugar until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, then add the vanilla.
  5. Alternate adding the dry ingredients and milk, beginning and ending with the flour mixture. Mix just until combined.
  6. Divide the batter evenly between the pans.
  7. Bake for 25–30 minutes, until a toothpick inserted into the center comes out clean.
  8. Cool in the pans for 10 minutes, then transfer to wire
