Ingredients
  

  • 1 lb white American cheese sliced or cubed
  • - ⅔ cup milk or half-and-half
  • - 3–4 tbsp canned green chiles or jalapeños chopped
  • - 1 tsp ground cumin
  • - 1 tsp chipotle powder optional

Equipment

  • Slow cooker or double boiler (or a heatproof bowl over a pot of simmering water)
  • Whisk or spoon (for stirring)
  • Knife & cutting board (for optional jalapeño/chile prep)
  • Serving bowl and tortilla chips for dipping

Method
 

**Slow Cooker Method:**
  1. Set slow cooker to low.
  2. Add all ingredients and stir occasionally until smooth (30–60 minutes).
  3. Serve warm, keeping on warm setting.
**Double Boiler Method:**
  1. Simmer water in the lower pot; heat milk, chiles, and spices in the top pot.
  2. Gradually stir in cheese until fully melted and smooth.
  3. Serve immediately with tortilla chips or dippers.

Notes

- White American cheese melts best and gives that classic restaurant texture.
- Add hot sauce for extra heat, or stir in chorizo for a meaty twist.
- Store leftovers in the fridge and reheat gently with extra milk if needed.
