Set the oven to 400°F.

Put salt, pepper, garlic and onion powder, poultry spice, basil, and oregano on the turkey wings. Put a small amount of EVOO in a baking pan and cover the bottom with mushrooms, chopped onion, celery, bell pepper, and garlic. Put the skin-side-down turkey wings on top of the veggies, wrap tightly in foil, and put in the oven for 1 hour.

Take it out of the oven, add 1/2 cup of chicken stock, cover it with foil again, and bake it for another 45 minutes.

Take the pan out of the oven and pour the veggies and most of the liquid into a saucepan.

Flip the wings so that the skin is facing up and put them back in the oven. UNCOVERED on broil for 20 minutes (skin will get brown and slightly crispy). Texture is everything!

Add 1 can of cream of mushroom soup and 1/2 can of cream of chicken soup to the pan with the drippings. (Add spices to your liking) After 10 minutes of simmering, pour the sauce over the turkey wings. Cover with foil and return to oven to BAKE for another 20 minutes, or until tender.
