Ingredients:
- 30 ounces of thawed frozen hash brown potatoes
- 2 tablespoons of olive oil
- 1 diced yellow onion
- 3 big cloves of garlic, chopped
- 1/4 cup all-purpose flour
- 2 cups whole milk (or low-fat milk)
- 1 cup chicken broth
- 1 cup sour cream
- 8 ounces sharp cheddar cheese shreds
- 1/2 tablespoon chopped parsley (or dried)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 cup shredded sharp cheddar cheese (for topping)

- Preheat the oven to 350°F and grease a 9x13-inch baking dish.
Cheese Sauce:
- Heat olive oil in a medium-sized pot over medium-low heat.
