  • 30 ounces of thawed frozen hash brown potatoes
  • 2 tablespoons of olive oil
  • 1 diced yellow onion
  • 3 big cloves of garlic, chopped
  • 1/4 cup all-purpose flour
  • 2 cups whole milk (or low-fat milk)
  • 1 cup chicken broth
  • 1 cup sour cream
  • 8 ounces sharp cheddar cheese shreds
  • 1/2 tablespoon chopped parsley (or dried)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup shredded sharp cheddar cheese (for topping)
