Ingredients:
For the Pudding:
- 8 ounces chopped dried dates
- 1/2 cup water
- 1/3 cup butter
- 1 cup brown sugar
- 2 tbsp vanilla extract
- 2 large eggs
- 30g sugar
- 2 tbsp golden syrup (or dark corn syrup)
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1 tsp baking soda
For the Toffee Sauce:
- 1/2 cup whipped cream
- 1/4 cup butter
- 1/4 cup packed brown sugar
- 1/4 cup molasses
- 1/2 cup golden syrup
- 2 tsp vanilla extract
Instructions:
- Prepare the Dates: In a small pot, combine chopped dates and water. Bring to a boil, then simmer for a few minutes. Set aside.
- Make the Batter: In a mixing bowl, cream together butter, brown sugar, and vanilla extract. Add eggs one at a time, beating well after each addition. Mix in sugar and golden syrup.
- Combine Dry Ingredients: Sift together flour and baking powder. Add to the creamed mixture in three parts, mixing until smooth after each addition.
- Add Date Mixture: Puree the cooked date mixture and add baking soda. Mix into the batter until smooth.
- Bake the Puddings: Pour the batter into greased and floured muffin tins. Bake at 350°F for 18-20 minutes, or until firm.
- Make the Toffee Sauce: In a saucepan, combine all ingredients for the toffee sauce. Bring to a boil and cook for 2 minutes.
- Serve: Serve the warm puddings with the toffee sauce poured over the top.
