Decadent Sticky Toffee Pudding Recipe

Ingredients:

For the Pudding:

  • 8 ounces chopped dried dates
  • 1/2 cup water
  • 1/3 cup butter
  • 1 cup brown sugar
  • 2 tbsp vanilla extract
  • 2 large eggs
  • 30g sugar
  • 2 tbsp golden syrup (or dark corn syrup)
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda

For the Toffee Sauce:

  • 1/2 cup whipped cream
  • 1/4 cup butter
  • 1/4 cup packed brown sugar
  • 1/4 cup molasses
  • 1/2 cup golden syrup
  • 2 tsp vanilla extract

Instructions:

  1. Prepare the Dates: In a small pot, combine chopped dates and water. Bring to a boil, then simmer for a few minutes. Set aside.
  2. Make the Batter: In a mixing bowl, cream together butter, brown sugar, and vanilla extract. Add eggs one at a time, beating well after each addition. Mix in sugar and golden syrup.
  3. Combine Dry Ingredients: Sift together flour and baking powder. Add to the creamed mixture in three parts, mixing until smooth after each addition.
  4. Add Date Mixture: Puree the cooked date mixture and add baking soda. Mix into the batter until smooth.
  5. Bake the Puddings: Pour the batter into greased and floured muffin tins. Bake at 350°F for 18-20 minutes, or until firm.
  6. Make the Toffee Sauce: In a saucepan, combine all ingredients for the toffee sauce. Bring to a boil and cook for 2 minutes.
  7. Serve: Serve the warm puddings with the toffee sauce poured over the top.
