Brown Sugar Glazed Carrots

Tender, glossy brown sugar glazed carrots made with just butter, brown sugar, and time. A simple side dish that tastes special enough for holidays and easy enough for any night.

Ingredients
  

  • 2 lbs carrots peeled and cut into 2-inch chunks
  • ½ cup butter melted
  • ½ cup brown sugar packed
  • Salt and pepper to taste
  • Optional: fresh thyme or parsley for garnish

Method
 

  1. Preheat oven to 375°F.
  2. Toss carrots with melted butter and brown sugar in a baking dish until coated. Season with salt and pepper.
  3. Cover tightly with foil and bake 30 minutes.
  4. Remove foil, stir, and bake uncovered 20–25 minutes more, stirring once, until fork-tender and glaze is thick and glossy.
  5. Rest a few minutes before serving. Garnish if desired.

Notes

Cut carrots uniformly for even cooking. Cover first to tenderize, then uncover to caramelize. The glaze thickens as it rests. Butter gives the best flavor and shine.
