- Bring a pot of salted water to a boil.
- Add the shrimp and cook for 2 to 3 minutes, just until pink and lightly curled.
- Drain the shrimp and rinse immediately under cold water.
- In a medium saucepan, combine the vinegar, olive oil, sugar, peppercorns, mustard seeds, red pepper flakes, bay leaves, and salt.
- Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
- Layer the cooked shrimp, sliced red onion, garlic, and lemon slices in a large glass jar or container.
- Pour the warm pickling liquid over the shrimp, making sure everything is covered.
- Press down gently so the shrimp stay submerged.
- Cool to room temperature, then cover tightly and refrigerate for at least 8 hours or overnight.
- Serve cold with crackers, crusty bread, or toothpicks.
