Ingredients
  

  • 8 –10 small flour tortillas
  • 3 cups cooked chicken shredded
  • 3 cups Monterey Jack cheese divided
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 can 4 oz diced green chiles
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Method
 

  1. Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish.
  2. Melt butter in a saucepan over medium heat. Whisk in flour and cook 1 minute. Gradually whisk in chicken broth until thickened.
  3. Remove from heat; stir in sour cream and green chiles until smooth. Season with salt and pepper.
  4. Mix shredded chicken with 1 cup cheese and about ½ cup of the sauce.
  5. Warm tortillas. Fill with chicken mixture, roll up, and place seam-side down in the dish.
  6. Pour remaining sauce over the enchiladas. Sprinkle with remaining 2 cups cheese.
  7. Bake 25–30 minutes until cheese is melted, bubbly, and lightly golden. Rest a few minutes, garnish, and serve.

Notes

Rotisserie chicken is a great shortcut. Warm tortillas so they roll without cracking. Remove sauce from heat before adding sour cream. Cover enchiladas completely with sauce. Freshly shredded cheese melts best. Excellent make-ahead and freezer-friendly. Leftovers reheat well.
