Ingredients
  

  • 6 bone-in skin-on chicken thighs (5-6 oz each)
  • 2 tbsp olive oil
  • 2-3 tsp chicken seasoning or Italian seasoning
  • Salt & pepper to taste

  • Paper towels

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat chicken dry with paper towels. Rub olive oil over thighs.
  3. Season with chicken seasoning, salt, and pepper.
  4. Place skin-side up on the baking rack and bake for 35-40 minutes (until internal temp reaches 165°F).
  5. Broil for 2-3 minutes for extra crispiness. Let rest 5 minutes before serving.

Notes

  • For extra crispy skin, dry the chicken well before seasoning.
  • Store leftovers for up to 4 days in the fridge or freeze for up to 3 months.
