Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 2 cups warm water
  • teaspoons active dry yeast 1 packet
  • 1 tablespoon olive oil optional

Equipment

  • Large bowl, oven-safe lidded pot or Dutch oven

Method

  1. Mix warm water, sugar, and yeast; let sit 5 minutes until foamy.
  2. Stir in flour and salt until a shaggy dough forms. Cover and rise 2 hours until doubled.
  3. Gently transfer dough to a greased lidded oven-safe pot. Rest 30 minutes.
  4. Preheat oven to 450°F. Bake covered 30 minutes, then uncovered 10–15 minutes until deeply golden.
  5. Cool at least 10 minutes before slicing.

Notes

Dough will be sticky — that is correct. Do not knead. A lidded pot creates steam for better rise. Cool before slicing for best texture. Optional whole-wheat substitution works well. Excellent for toast, sandwiches, and serving with soup.
