- In a large bowl, mix active sourdough starter, eggs, melted coconut oil, honey, and salt until smooth.
- Add baking soda and stir gently; the batter will foam and expand.
- Heat 1 tablespoon coconut oil in a heavy cast-iron skillet over medium heat until hot and shimmering.
- Pour ½ cup foamy batter into the skillet. Reduce heat to medium-low.
- Cook until the top is bubbly and edges are set, 2–3 minutes. Flip once.
- Cook the second side 30–60 seconds until deeply golden and cooked through.
- Repeat with remaining batter, adding oil as needed. Serve hot with desired toppings.
- Notes Use active, bubbly starter fed 4–12 hours earlier. Add baking soda last and cook promptly. For mix-ins, place them on the uncooked surface after pouring. Keep finished pancakes warm in a
