Ingredients
  

  • 1 lb ground beef
  • ¼ cup water
  • 1 Tbsp taco seasoning
  • 2 Tbsp olive oil
  • 4 large flour tortillas
  • cups shredded cheddar or Mexican blend cheese plus extra for fusing
  • ½ cup sour cream
  • ½ cup cooked rice white or Spanish

  • Two skillets (or one wiped clean), spatula

Method
 

  1. Brown ground beef; drain fat. Stir in taco seasoning and water; simmer 3 minutes until thickened.
  2. In a clean skillet over medium heat, sprinkle a handful of cheese in a tortilla-sized circle. Place tortilla on top, press gently, cook 1 minute until cheese fuses, then flip cheese-side up.
  3. Spread sour cream down the center; add beef, rice, and more cheese. Fold sides and roll tightly, cheese layer outside.
  4. Add a little olive oil to the skillet; grill quesarito seam-side down 2–3 minutes per side until golden and crispy.
  5. Slice and serve warm with extra sour cream, salsa, or guacamole.

Notes

Drain beef well. Use medium heat for cheese fusing. Do not overfill. Roll tightly and grill seam-side down. Freshly shredded cheese melts best. Excellent with Spanish rice or plain leftover rice. Best served immediately for maximum crispness and cheese stretch. Easily doubled.
