Ingredients

  • Dough:
  • 4 cups all-purpose flour
  • 1 cup warm milk
  • ½ cup sugar
  • ½ cup butter softened
  • 2 eggs
  • 1 packet 2¼ tsp active dry yeast
  • 1 tsp vanilla extract
  • ½ tsp salt
  • Walnut Filling:
  • 3 cups ground walnuts
  • ¾ cup sugar
  • ½ cup milk
  • 2 Tbsp butter
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Glaze:
  • 1 cup powdered sugar
  • 2 –3 Tbsp milk
  • ½ tsp vanilla extract

Equipment

  • Baking sheet, rolling pin, saucepan

Method

  1. Dissolve yeast in warm milk with a pinch of sugar; let stand until foamy, about 5 minutes.
  2. Mix flour, sugar, and salt. Add softened butter, eggs, vanilla, and yeast mixture. Knead until smooth and elastic, about 5 minutes. Let rise until doubled, about 1 hour.
  3. Meanwhile, cook ground walnuts, sugar, milk, butter, cinnamon, and vanilla over medium heat, stirring, until thickened into a paste, about 5 minutes. Cool completely.
  4. Punch down dough, divide in half, and roll each into a ¼-inch-thick rectangle. Spread with filling, roll up tightly from the long side, and seal.
  5. Place seam-side down on a parchment-lined baking sheet; let rise 30 minutes.
  6. Bake at 350°F for 30–35 minutes until golden. Cool 10 minutes, then drizzle with glaze made from powdered sugar, milk, and vanilla. Slice and serve.

Notes

Cool the filling completely before spreading. Roll tightly and seal well. Glaze while warm. Excellent for holidays and gifting. Freezes well once cooled. Classic Hungarian comfort that fills the house with the smell of butter and walnuts.
