Ingredients
  

  • 1 can 14 oz sweetened condensed milk
  • 1 can whole milk use empty condensed-milk can to measure
  • 1 can coconut milk use the same can
  • 3 large eggs
  • 1 cup sweetened shredded coconut plus extra for coating
  • 1 teaspoon vanilla extract
  • Butter for greasing the pan

Method
 

  1. Preheat oven to 350°F. Generously butter a bundt or round cake pan and dust with shredded coconut.
  2. Add condensed milk, whole milk, coconut milk, eggs, 1 cup shredded coconut, and vanilla to a blender. Blend until completely smooth.
  3. Pour the thin batter into the prepared pan.
  4. Bake 50–60 minutes until the top is golden and the center barely jiggles.
  5. Cool completely in the pan, then refrigerate at least 4 hours or overnight.
  6. Run a knife around the edges, invert onto a plate, and coat with additional shredded coconut.
  7. Slice and serve cold.

Notes

The batter is intentionally thin. Full-fat coconut milk gives the best texture. Thorough chilling is essential for clean slices. Coat with coconut while the cake is still slightly moist so the flakes adhere. Cake keeps well covered in the refrigerator for up to 5 days.
