Ingredients

  • 1 cup warm milk about 110°F
  • cup sugar
  • teaspoons active dry yeast 1 packet
  • cup melted butter
  • 1 teaspoon salt
  • 1 egg beaten
  • 3½ to 4 cups all-purpose flour
  • 2 tablespoons melted butter for brushing

Equipment

  • Large mixing bowl, baking sheet, kitchen towel

Method

  1. Combine warm milk, sugar, and yeast. Let sit 5 minutes until foamy.
  2. Stir in melted butter, salt, and beaten egg.
  3. Add flour gradually until a soft, non-sticky dough forms. Knead 5 minutes until smooth and elastic.
  4. Place in a greased bowl, cover, and let rise 1 hour until doubled.
  5. Punch down, divide into 12 pieces, and shape into smooth balls. Place on a greased baking sheet. Cover and rise 30 minutes until puffy.
  6. Preheat oven to 375°F. Bake 12–15 minutes until golden.
  7. Brush with melted butter immediately. Serve warm.

Notes

Use milk at about 110°F. Proof the yeast until foamy. Keep the dough soft—avoid adding too much flour. Give both rises full time. Brush with butter while hot for soft, glossy tops. Best served warm. Dough and baked rolls freeze well. Excellent with soup, dinner, or simply butter.
