- Pat beef dry, season with salt and pepper, and dust with flour.
- Heat oil in a Dutch oven over medium-high heat and sear the roast on all sides. Remove and set aside.
- Lower heat, add butter and onions, sprinkle with sugar, and cook 15–20 minutes until deep golden. Add garlic and cook 1 minute.
- Stir in tomato paste, then deglaze with red wine and reduce 3–5 minutes.
- Add beef broth, thyme, and bay leaf. Return beef to the pot.
- Cover and simmer on low (or in a 325°F oven) for 2–2½ hours until fork-tender.

not rush the onion caramelization. Keep the simmer gentle for the most tender meat. The roast tastes even better the next day. Excellent with mashed potatoes, spaetzle, or crusty bread. Leftovers freeze well.
