Taco Loaded Baked Potatoes

Crispy baked potatoes loaded with seasoned taco beef, melted cheddar, sour cream, green onions, and fresh tomatoes. An easy, customizable Tex-Mex dinner.

Ingredients
  

  • 4 –6 medium Russet potatoes
  • 1 pound lean ground beef
  • 1 packet 1 oz taco seasoning
  • ½ cup water
  • 1 cup sharp cheddar cheese shredded
  • ½ cup sour cream
  • ¼ cup green onions chopped
  • ½ cup fresh tomatoes diced

Equipment

  • Large skillet, baking sheet or oven rack

Method
 

  1. Scrub and pierce the potatoes. Bake at 400°F for 45–50 minutes until fork-tender.
  2. While potatoes bake, brown the ground beef in a skillet over medium heat; drain excess grease.
  3. Stir in taco seasoning and water. Simmer about 5 minutes until thickened.
  4. Slice potatoes open lengthwise and fluff the insides with a fork.
  5. Spoon seasoned beef over each potato. Top with cheddar, sour cream, green onions, and tomatoes.
  6. Serve immediately.

Notes

For crispier skins, rub potatoes with oil and salt before baking. Customize with avocado, jalapeños, cilantro, or hot sauce. Potatoes and meat can be prepared ahead and assembled just before serving.
